The Story of 1•2•3 Gluten Free
Over 15 years ago, I was diagnosed with celiac disease. As an adult, I was content to do without, rather than to eat what was available on the market. However, when two of my nieces and one nephew were diagnosed with celiac disease, I was determined that they should be able to eat only the best, as well as gluten-free versions of what their non-celiac friends were eating. In fact, I developed the Southern Glory Biscuit recipe when one of the children wanted to have "pigs-in-a-blanket" for her birthday. We soon found that the children and adults (both celiac and non-celiac) in our family enjoyed the foods I created. Having shared these foods with non-family members, again both celiac and non-celiac, we found these people were equally enthusiastic. We decided to share with others what our family and friends have enjoyed. We hope you enjoy our products as much as we do.

To Make Brownies:
1 package divinely decadent brownies mix; 4 large eggs, room temperature (two egg-free recipes using either chick peas and unsweetened applesauce or tofu and canned pumpkin are printed on inside of this box);
1 cup unsalted butter or unsalted margarine, softened (for dairy-free version, replace butter with 3/4 cup vegetable oil):
1. Preheat oven to 350 degrees F (175 degrees C). Spray 9 inch x 13 inch pan with non-stick spray.
2. Pour mix into bowl of mixer with paddle attachment. Add eggs and butter. Mix well. Add any optional ingredients and stir in by hand. Pour mixture into pre-greased pan and spread evenly.
3. Bake for 20-30 minutes, until toothpick inserted in center comes out nearly clean. Baking times may vary with different appliances.
4. Cool. Cut with plastic knife and serve. Makes 24 brownies. Our family's special chocolate glaze: Melt approximately 1 1/2 cups chocolate chips over a double boiler. Add approximately 1/4-1/2 cup of milk to get a pourable consistency. Pour over the hot brownies when they come out of the oven. Let sit. This will harden into a yummy chocolate glaze.
