Gluten-Free Red Velvet Cookies
Red velvet lovers rejoice! These soft, chewy (and easily portable!) cookies incorporate a great gluten-free flour so pleasing more partiers is possible. After mixing the better-for-you ingredients – including turbinado sugar, grass-fed ghee and organic cocoa powder – dollop the dough onto a baking sheet and place the cookies in the freezer for about an hour. This technique helps the cookies spread less, develop a richer, chewier texture and retain their regal red color.
Gluten-Free Red Velvet Cookies
- 3/4 cup turbinado sugar
- 1/4 cup melted grass-fed ghee (or butter)
- 2 eggs
- 1/4 tsp. red food coloring
- 2 Tbsp. unsweetened cocoa powder
- 1-1/2 cups gluten-free flour
- 1 tsp. baking powder
- ¼ tsp. salt
- 1 tsp. vanilla
- In mixing bowl using hand mixer or stand mixer on medium speed, cream butter and for 1-2 minutes; add eggs and food coloring and mix until well combined.
- Add cocoa powder, flour, baking powder and salt and mix until dough is smooth.
- Onto parchment-lined baking sheet, scoop one tablespoon of dough at a time, arranging about 3 inches apart; place in freezer for one hour.
- Preheat oven to 350 degrees F. Remove cookies from freezer and bake from frozen for 10-12 minutes.
Note: Add sprinkle of powdered sugar and/or small white chocolate chips if desired.
