Savory Pumpkin Flatbread Pizza
Combine fresh or
canned pumpkin puree with flavorful garlic and chunky ricotta cheese to create the most phenomenal, autumn-inspired base for this simple
flatbread recipe. Top with mozzarella and nutritious veggies, then bake for 20 minutes – and voila! Your nutritious, seasonal lunch or dinner is served.
Savory Pumpkin Flatbread Pizza
- 4 flatbreads
- 2 cups broccoli (chopped)
- 1/2 red onion (sliced)
- 1/3 cup sun-dried tomatoes
- 1 cup mozzarella cheese
- 2 Tbsp. olive oil
Pumpkin sauce
- 2/3 cup pure pumpkin puree
- 3 Tbsp. ricotta cheese
- 1 tsp. minced garlic
- Preheat oven to 375 degrees F. Arrange flatbreads on baking sheet.
- In bowl, combine pumpkin sauce ingredients. Spread onto each flatbread.
- Top flatbreads with cheese, broccoli, red onion and sun-dried tomatoes.
- Bake for 20 minutes and drizzle with olive oil.
- For an extra crunch, top with roasted chickpeas before baking.
- Prefer using fresh pumpkin? If you prefer using fresh pumpkin, dice, roast and mash to use in the pumpkin sauce.
