How to Make Basic Kitchari
• ½ cup Rice and Dal
• 2 cups water
• 1 teaspoon Kitchari Spice Mix
• 2 teaspoons ghee
• ¼ cup vegetables (optional)
• Cilantro, lime, and salt to garnish (optional)
Soak rice and dal overnight, then drain and rinse. In a medium pot, warm the ghee, add the spice mix, and sauté for 1–2 minutes. Stir in the rice and dal, add water, and bring to a boil. Reduce heat to low, cover, and cook until tender (30–45 minutes). Add more water as needed. If adding vegetables, add denser vegetables halfway through, and add lighter vegetables near the end. Garnish with fresh cilantro, a squeeze of lime, and salt to taste. Makes 2 servings.
