Our Ube Mochi pancakes are a new way to enjoy gluten free mornings! Purple Yams, or Ube as they are known in the Philippines, give these pancakes a purple color and delicious flavor. Add some fun to your day and top with whipped cream and berries for a delicious colorful plate!
Ingredients
| 5-6 Pancakes | 15-16 Pancakes |
| 3/5 cup mix | Whole bag |
| ½ cup water | 1½ cups water |
1. Mix your ingredients until combined. Let prepared batter sit for 2 minutes.
2. Heat your pan over medium-high heat or turn your electric griddle to 375°F.
3. Lightly Oil the pan or griddle
4. Pour or scoop ¼ cup of batter for each pancake onto your hot pan or griddle.
5 Cook for 2 minutes on each side or until pancakes are lightly browned.
Want Waffles?
Mix ¾ cup of mix, 2/3 cup of water, and 1 tbsp of oil.
Mix until combined and let batter rest for 2 minutes.
Heat up waffle iron, coat with non-stick cooking spray.
Cook according to the waffle iron instructions or until waffles are lightly browned.
