Vegan Egg Replacer
Combine 1 Tbsp flaxseed meal and 3 Tbsp water for each egg needed. Let sit for 5 minutes before adding to your recipe.
Store in a cool, dry place. Keeps best refrigerated or frozen after opening.

Spooky Black Bean Spaghetti & Meatballs

This classic recipe is super simple, but with a deliciously devilish twist. Black soybean flour spaghetti adds an eerie touch along with an extra-playful punch of protein. Top it with homemade meatballs and marinara to conjure up a Halloween-themed dish that's equal parts delightful and spine chilling.
Spooky Black Bean Spaghetti & Meatballs
- 1 lb. ground beef
- 1 Tbsp. ground flaxseed (+ 2 Tbsp. water, or 1 whole egg)
- 1 tsp. pink salt
- ¼ tsp. black pepper
- ½ tsp. dried oregano
- ¼ tsp. garlic powder
- 1 jar (32 oz.) marinara sauce
- 8 oz. black bean spaghetti
- ½ cup shredded mozzarella
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In medium bowl, mix together ground beef with flax egg and spices until fully incorporated.
- Roll mixture into 12 meatballs using about 3 tablespoons per meatball. Arrange meatballs on baking sheet.
- Bake 20-25 minutes until meatballs are cooked through and slightly browned.
- In medium pot, heat marinara sauce with cooked meatballs.
- In large pot, cook black bean spaghetti according to package directions.
- Plate pasta, spoon over sauce with meatballs and top with shredded mozzarella.
