Skillet Tamale Pie with Cornbread Topping
Instead of Taco Tuesday, why not enjoy
Tamale Tuesday this week? This creative skillet casserole features a hearty Tex-Mex filling (with meat, beans, tomato and corn!) and a soft cornbread topping that melts in your mouth. Need a veg version? Simply sub in plant-based crumbles for the ground beef. Delight your fam with something different for dinner! Or, whip up this dish and divvy it into containers for meal prep made easy.
Skillet Tamale Pie with Cornbread Topping
Tamale Pie
- 1 lb. ground beef
- 1 tsp. salt
- ¼ tsp. black pepper
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 cup corn kernels
- 1 cup black beans
- 1 cup diced tomatoes (canned or fresh)
Topping:
- 2 cups masa harina
- ½ tsp. salt
- 1 cup oat milk
- 1 cup water
- 1 Tbsp. egg replacer + 2 Tbsp. water
- Preheat oven to 400 degrees F
- In a medium pot, cook ground beef on medium-high heat until cooked through.
- Drain any excess fat by pushing meat to one side of pot, absorbing oil with paper towels. (Note: Take caution working with hot oil.)
- Stir in spices, corn, beans and tomatoes.
- Pour meat and veggies into a cast iron skillet or 9-inch baking pan.
- In medium mixing bowl, stir together masa, salt, water, milk and egg.
- Evenly spread masa over meat and veggie mixture.
- Bake 20-25 minutes until brown on top.
