Peanut Butter Banana Muffins
Ripe bananas, natural peanut butter and oat flour make these muffins a healthier option for breakfast or when you need a solid pick-me-up snack. Notice that processed sugar is nowhere near the ingredient list. Very ripe bananas together with honey add the perfect amount of natural sweetness. Add cinnamon chips, chocolate chips, walnuts or coconut flakes depending on your mood or what’s in the pantry.
Peanut Butter Banana Muffins
- 3 very ripe bananas
- 2 cups oat flour
- 1 tsp. baking powder
- 1/2 cup honey
- 1/4 cup all-natural peanut butter
- 1/3 cup melted coconut oil
- 3 eggs
- 1/2 cup cinnamon chips
Topping
- 1/3 cup crunchy peanut butter
- Preheat oven to 350 degrees F.
- In large bowl, mash bananas.
- Mix in remaining ingredients, stirring in cinnamon chips last.
- Pour batter into muffin pan.
- Bake 20-25 minutes.
- Top each muffin with crunchy peanut butter.
Notes:
- Swap cinnamon chips with chocolate chips, walnuts or coconut flakes.
- To make bread instead, use loaf pan and increase baking time to at least 55 minutes. Bread is done when toothpick inserted in center comes out clean.
