Farro is one of our most popular ancient grains and a relative of modern-day wheat. It was a mainstay of the daily diet in ancient Rome and is still a popular food and ingredient in Italy today. Farro is hearty and chewy, with a rich, nutty flavor. Use in soups, casseroles, salads and pilafs.

Known as "the mother of all wheat," farro was a staple food in ancient Rome, and lucky for us, these grains are also delicious. These "super grains" with their unique flavors are ideal for grain bowls, salads, side dishes, entrees and baked goods. Try them and you'll see!

Directions
Basic Cooing Instructions
Stovetop: Bring 2 quarts of water to a boil in a pot with 1 tsp salt. Add 1 cup rinsed farro, return to a boil, then reduce the heat to medium-high and boil uncovered until soft, about 30 minutes. Drain off cooking water, then served.
Pre-Soak Method: Cover 1 cup farro with water and soak in the refrigerator overnight, then drain. Place in a pot and add 3 cups water or stock (enough to cover the grains). Bring to a boil; reduce heat to medium-low and simmer for 10 minutes. Drain excess liquid and serve.
Slow Cooker: Place 1 cup rinsed farro, 4 cups water and 1 tsp salt into a slow cooker. Cover and cook on low for 2-2½ hours or high for 1½ hours. Drain excess water and serve.
Multi-Cooker: Place 1 cup rinsed farro, 3 cups water and 1 tsp salt in the pot of a multi-cooker. Set the valve to sealing. On manual setting and high pressure, set for 12 minutes. Quick release the pressure. Drain excess water and serve.

Summer Farro Salad With Strawberries & Basil

The nutty chewiness of the farro provides a satisfying base for the sweet strawberries, crunchy almonds and fragrant basil. The homemade dressing, with its balance of tangy lemon, sweet honey and rich olive oil, ties all the flavors together. This versatile salad can be served chilled for a refreshing side dish or at room temperature for a hearty main course.
Summer Farro Salad With Strawberries & Basil
Farro
Salad
- 1 lb. sliced strawberries
- 2 oz. fresh basil (torn)
- 1/2 cup sliced almonds (toasted)
Dressing
- 2 Tbsp. minced shallot
- 2 Tbsp. lemon juice
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. honey
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 1 tsp. poppy seeds
- 1/2 cup light olive oil
- In pot over high heat, bring farro and water to boil. Reduce heat and simmer until tender, about 30 minutes. Drain and rinse thoroughly. Store chilled until ready to use.
- To make dressing, use a blender or food processor to combine all ingredients except oil. Once mixture is smooth, slowly stream in oil until creamy and emulsified.
- To assemble salad, toss farro, strawberries, almonds and dressing. Add basil and gently toss. Serve chilled or at room temperature.
