Bob's Red Mill Vital Wheat Gluten is made from the protein found in the endosperm of the wheat berry, containing 75% to 80% protein. When combined with water it becomes highly elastic and has a taffy-like texture. A small amount added to yeast bread recipes improves the texture and elasticity of the dough, helps retain the gas and steam from baking, and gives more volume to the baked bread. It can be especially helpful for baking breads made with whole grain flours and coarse cereals. Vital wheat gluten is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals.

 

Vital wheat gluten is also a staple ingredient for meat and meat substitutes. It acts as a binder for meatballs, meatloaf, veggie burgers and tofu alike. Vital wheat gluten is the main ingredient in the popular meat substitute, seitan. To make seitan, mix vital wheat gluten with spices and then add water to make a dough. When the gluten dough is steamed, baked, boiled, or otherwise cooked, it becomes chewy with a very meat-like texture. Glazed Vegan Ham

  • 1 cup vegetable broth
  • 3/4 tsp. vegan liquid smoke
  • 3 Tbsp. avocado oil
  • 1 Tbsp. ketchup
  • 1-1/2 tsp. smoked sea salt
  • 1/2 tsp. garlic powder
  • 2 Tbsp. nutritional yeast
  • 1 Tbsp. smoked paprika
  • 14 oz. extra firm tofu (drained)
  • 1-1/2 cups vital wheat gluten
  • Whole cloves

Glaze

  • 1/2 cup vegetable broth
  • 2 Tbsp. maple syrup
  • 1/2 tsp. Himalayan fine pink salt
  • 1/2 tsp. smoked paprika
  1. In blender, combine all ingredients except vital wheat gluten and cloves; Blend until smooth.
  2. In large mixing bowl, pace vital wheat gluten and stir in blended mixture. Knead about 1 minute until mixture is firm.
  3. Using hands, form mixture into oblong ham-shaped loaf. Wrap in aluminum foil and secure tightly by pinching ends shut.
  4. In large pot with steamer basket, place “ham” into basket and fill with enough water to touch bottom of steamer basket. Cover with lid and cook 1 hour, adding water as needed. Remove from pot and set aside.
  5. Preheat oven to 375 degrees F. Remove ham from aluminum foil and place into baking dish.
  6. Using sharp knife, score ham across top and onto sides in a diamond pattern. Place whole cloves here and there into diamonds, using about 18.
  7. In small bowl, mix together glaze ingredients and evenly brush over ham.
  8. Bake ham 25 minutes, basting with remaining glaze and juices and it cooks.

  9. Allow to cool slightly before slicing and serving.
