Sweetener if desired
1 handful Ice (about 1/2 cup)

 

Instructions

 

Protein Shake
For a quick and easy protein shake, add 1/4 cup Whey Protein Concentrate to a glass of juice or milk. Stir and enjoy.

Smoothie
To make a delicious smoothie, add all ingredients to a blender and blend until smooth. Makes about 2 cups.

Berry Protein Ice Pops

Your main courses are set—burgers and lentil-oat patties are on the menu this Fourth of July. Sides like potato salad and corn on the cob round out the list, with whole grain onion rings making a surprise appearance. What’s for dessert? Forget cakes and cupcakes; you need a treat that cools you off and makes you feel good about eating it. Take these ice pops, for instance. They’re are made with protein powder, coconut milk, Greek yogurt and fresh berries. Festive and healthy, there’s nothing to feel guilty about on the dessert list.

Yields 8 ice pops

Ingredients

3/4 cup Bob’s Red Mill Whey Protein Powder
13.5 fl. oz. canned coconut milk
1/4 cup plain or vanilla Greek yogurt
Zest of 1 lemon
1 - 2 Tbsp. honey
1/2 cup fresh raspberries
1/2 cup fresh blueberries

Directions

  1. In a medium bowl, whisk together protein powder, coconut milk, yogurt, lemon zest and honey.
  2. Fill ice pop molds to the tops with berries, leaving plenty of room between them. If desired, alternate layers of raspberries and blueberries.
  3. Pour coconut protein mixture into ice pop molds to top line. Gently tap molds to make sure there aren’t any air bubbles.
  4. Insert popsicle sticks and freeze for at least 4 hours.
