Dear Friends, Many years ago, my wife Charlee and I stayed at a beautiful bed and breakfast in the Scottish countryside. One morning, our hostess served us the most amazing cereal. It was full of rolled grains, nuts, seeds and dried fruit. This was my first contact with the traditional European cereal known as muesli. A quick bit of history: muesli was invented over a century ago by a Swiss doctor who was way ahead of his time when it came to understanding the health benefits of whole grains. He made all of his patients eat muesli every day, and they loved it!
I enjoyed that muesli so much that I was inspired to make my very own version of this nutritious cereal. I started with a combination of five flavorful rolled grains - oats, wheat, barley, rye and triticale. Then I added sweet dates and raisins, crunchy sunflower seeds, almond slices and walnut pieces. Finally, for an extra boost of nutrition, I topped it off with a good handful of flaxseed meal. Voila! Bob's Red Mill Old Country Style Muesli was born. Whether you eat it hot, cold, or soaked in yogurt overnight (the traditional Swiss way), I just know you will enjoy this wholesome cereal.

Perfectly Simple Cereal
Bob's Red Mill muesli is wonderfully tasty and nourishing! What makes this cereal so great? It's perfectly simple:

Directions
Have it Hot:
Stovetop: For hot cereal, bring 1 cup of water to a boil. Add ½ cup muesli, reduce heat to medium-low and simmer for about 7 minutes. Remove from heat, cover, and let stand for 2 minutes before serving. Makes 2 delicious servings.
Microwave: Put ¼ cup muesli and ½cup water or milk in a large bowl. Microwave on high for 3 minutes, stopping to stir once during cooking. Makes 1 marvelous serving.
Make It Cold: For cold cereal, add ¼ cup muesli to ½ cup yogurt, milk or fruit juice. Let sit for 5 to 10 minutes. Makes 1 terrific serving.
Try it Swiss Style: To make 1 serving of Swiss-style cereal, combine ¼ cup muesli, ½ cup yogurt and 1 cored and grated apple (including the peel). Cover and let sit in the refrigerator overnight.
Store in a cool, dry place.

Homemade Orange-Cranberry Muesli Bars
You’re just not a morning person. The secret to getting in a healthy breakfast when you’ve got a snooze addiction is simple: bake up these homemade muesli cereal bars on Sunday and eat them throughout the week. Full of whole grains, fruits and seeds, these good-for-you bars are the perfect option when you need to grab food and rush out the door.

Makes 12 bars
Ingredients
1-1/2 cups Bob’s Red Mill Old Country Style Muesli
1/2 cup Bob’s Red Mill Whole Grain Oat Flour
1/3 cup Bob’s Red Mill Dried Cranberries
3 Tbsp. Bob’s Red Mill Organic Golden Flaxseed Meal
1/2 tsp. ground cinnamon
1/2 tsp. sea salt
1 tsp. baking powder
1/4 tsp. baking soda
2 tsp. orange zest
1 + 1/4 cup water, separated
1/4 cup honey
3 Tbsp. orange juice concentrate
2 Tbsp. olive oil (or walnut oil), plus more for greasing pan
Directions
- Preheat oven to 350 degrees F. Grease an 8-inch square baking pan.
- In a small bowl, combine flaxseed meal with 1/4 cup water. Beat vigorously with a fork until mixture thickens. Set aside.
- In a 3-quart pot, add 1 cup water and bring to boil. Remove from heat. Stir in cinnamon, salt, honey, orange juice and oil. Stir in muesli, oat flour, cranberries, baking powder and soda. Fold in flax mixture and orange zest until combined.
- Transfer to greased pan and smooth out top.
- Bake for about 40-45 minutes or until golden and a toothpick comes out clean.
- Remove from oven and place pan on cooling rack. Cut into 12 bars when cooled. Will keep for 5 days when stored in a cool place.
