Stovetop Oatmeal With Apples and Peanut Butter

[vc_row][vc_column][vc_column_text]This creamy, nutty stovetop oatmeal is the ideal way to start a cozy fall morning. It takes just a few minutes and makes enough to feed a crowd, plus you can add any of your favorite toppings like crunchy nuts, a drizzle of cream or extra peanut butter. Stovetop Oatmeal With Apples and Peanut Butter

Stovetop Oatmeal With Apples and Peanut Butter

  • 2 medium apples (peeled, cored and diced)
  • 1 cup water
  • 2 cups whole milk
  • 1/4 tsp. kosher salt
  • 2 cups old-fashioned rolled oats
  • 1/4 cup creamy natural peanut butter
  • 1/4 cup maple syrup
  • 1/4 tsp. pure vanilla extract
  • 1/2 tsp. ground cinnamon
  1. In medium saucepan over medium heat, cook apples with few splashes of water until softened, stirring regularly. You can keep them fairly firm or cook them for up to 30 minutes for a smoother apple sauce.
  2. Meanwhile, bring cup of water, milk and salt to boil in separate medium saucepan. Stir in oats and reduce heat to simmer. Stir in peanut butter, maple syrup, vanilla and cinnamon until mixture is uniform and creamy, 3 to 4 minutes.
  3. Remove from heat and serve with apple compote on top, plus any additional toppings you like.

Optional toppings: almonds, peanuts, walnuts, cream, additional cinnamon or additional peanut butter
