Lime Olive Oil Cake

Lime Olive Oil Cake
- 1 cup extra-virgin olive oil (plus more for pan)
- 3/4 cup granulated sugar (plus more for sprinkling)
- 1-1/2 cups cake flour
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. kosher salt
- 3 large eggs
- 3 Tbsp. fresh lime juice
- Zest of one lime
Optional garnish
Preheat oven to 350 degrees F. Coat 9-inch round cake pan with olive oil. Line bottom with parchment paper cut to fit and coated with olive oil. Sprinkle bottom and sides of pan with sugar.
- In large mixing bowl, combine flour, baking powder, baking soda and salt. Make a well in center of dry ingredients and add olive oil, eggs, lime juice and zest. Combine well.
Pour batter into pan and bake 35-40 minutes, until toothpick inserted in center comes out clean.
- Cool 10 minutes in pan, then transfer to wire rack to cool completely.
- Garnish with lime zest and powdered sugar, if desired.
