Our Protected Geographical Indication (PGI) Organic Sicilian Extra Virgin Olive Oil is certified and guaranteed by the Italian Ministry of Agriculture, Food and Forest Policies.

 

This regulation guarantees that the olives used to produce this EVOO were grown and harvested in Sicily, as well as produced and bottled on the island.  The olives must also provide a max 24% yield and follow strict organic processes.

 

One of the many strict regulations of the PGI Sicily is that the olives used to make this precious oil must be grown and harvested in Sicily.  The olives must provide a max 24% yield and be grown by  organic means.

 

The entire process, from when the olives begin to grow to the day the oil is bottled, is strictly monitored by IRVO (Istituto Regionale del Vino e dell’Olio) a certifying body controlled by the Italian government.

 

Our factory then undergoes strict organoleptic and chemical testing in order to guarantee quality and traceability.  Upon approval, each bottle is awarded its own unique serial number providing full traceability and authenticity, which is printed on the back of the bottle.

 

Variety of Olives: Biancolilla (55%), Cerasuola (40%), Nocellara del Belice (5%)

Production Region: Sicily

Extraction method: Cold extracted with continuous cycle system.

Color: Green with yellow straw hues.
Aroma: Delicate and persistent with hints of fresh grass, artichoke and sometimes of green tomato typical of Sicily.

Flavor: Delicate taste with hints of fresh grass and sometimes of green tomato, with a light and lovely spicy sensation.

Charred Peach Burrata Bruschetta

Charred Peach Burrata Bruschetta

  • 1 large rustic baguette (sliced in half lengthwise)
  • 3 yellow peaches (sliced in half and pit removed)
  • 2 balls (8 oz.) burrata cheese
  • 2 cups cherry tomatoes (sliced into small chunks)
  • 1 shallot (diced)
  • 1/2 lemon (juice only)
  • 1/4 cup basil (chiffonade cut)
  • Olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • Balsamic glaze
  1. Preheat grill on high 10 minutes.
  2. Drizzle sliced peaches and bread with olive oil and sprinkle with salt. Arrange on grill and cook 2-3 minutes until nice char marks form; Remove to cool.
  3. Slice cooled peaches into small chunks.
  4. In large bowl, combine prepared peaches, tomatoes, shallot, basil, lemon juice, drizzle of olive oil and pinch of salt and pepper. Toss together and combine well.
  5. Add 1 ball of burrata cheese to each slice of baguette and spread evenly. Top with several spoonfuls of peach mixture and drizzle of balsamic glaze.
  6. Slice bruschetta into individual portions and serve.
