Ingredients
4 salmon fillets (6 oz.), skinned
1-1/2 cups strawberries, hulled and halved
1/2 cup balsamic vinegar
4 cups Simple Truth Organic Orange Juice
1 Tbsp. Simple Truth Organic Extra Virgin Olive Oil
Salt and pepper, to taste
Directions
- In small bowl, combine strawberries, vinegar and orange juice. Let stand 15 minutes.
- Season both sides of salmon with salt and pepper. Brush grill pan with olive oil and heat pan (or skillet) over medium-high heat until very hot. Add fish to pan and cook 4 minutes on one side. Turn and cook for 4 minutes more or until salmon flakes easily.
- Transfer salmon to plates. Using a slotted spoon, remove strawberries from vinegar and spoon over the salmon.
