Directions

Cookie Icing Recipe

Enough for 1 Dozen Cookies

3 cups powdered sugar

¼ tsp vanilla extract

4 Tbsp milk (add more milk as desired)

1-1/2 color packet (more for deeper shade)

  • Mix ingredients together until smooth
  • Add color
  • Blend until all the color has dissolved
  • Drizzle on cookies, or use icing bottle

Frosting Recipe

Makes 1 Cup

4 Tbsp unsalted butter (room temp)

2 cups powdered sugar

2 Tbsp milk

½ tsp vanilla extract

1/2-1 color packet (more for deeper shade)

  • In a small bowl, beat butter, sugar, milk and vanilla until light and fluffy
  • In small cup, mix color with a couple drops of water or glycerin to dissolve
  • Gently blend liquid color into frosting

Naturally Colored Rainbow Layer Cake (Gluten-Free & Vegan)

The celebration begins the moment you start to make this cake. Not one to be intimidated by the amount of bowls and pans in your workspace, you shout gleefully, “The more, the merrier!” as you swirl different natural colorings into each mixing bowl. Naturally Colored Rainbow Layer Cake (Gluten-Free & Vegan)

  • 1-1/2 cups Bob’s Red Mill Almond Flour
  • 1 cup Nutiva Coconut Sugar
  • 1 cup almond milk
  • 1/4 cup water
  • 1/3 cup coconut oil
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. lemon juice
  • 1 Tbsp. vanilla extract
  • 2 tsp. baking soda
  • 1/2 tsp. Redmond Real Salt
  • 3 Tbsp. MRM Superfoods Raw Organic Red Beet Powder (purple layer)
  • 1 pkg. Color Kitchen Bright Blue Real Food Coloring (blue layer)
  • 1 pkg. Color Kitchen Green Real Food Coloring (green layer)
  • 3 Tbsp. Suncore Foods Yellow Goldenberry Super Color Powder (yellow layer)
  • 2 Tbsp. SunFood Superfoods Organic Beets & Mushrooms (orange layer)
  • 1/2 tsp. paprika (orange layer)
  • 1 pkg. Color Kitchen Beet Red Real Food Coloring (red layer)
  • 2 pkgs. Miss Jones Organic Gluten-Free Vanilla Frosting
  1. Preheat oven to 350 degrees F and grease six 8”x8” cake pans with coconut oil.
  2. In large bowl, combine almond milk and apple cider vinegar. Set aside.
  3. In medium bowl, whisk together flour, sugar, baking soda and salt.
  4. In almond milk-vinegar mixture, whisk in water, coconut oil, lemon juice and vanilla. Add flour mixture and whisk until smooth.
  5. Into six bowls, divide batter evenly and add appropriate coloring ingredient(s) to make each a different color of the rainbow. Mix well until desired strength of color is achieved. Pour one color into each baking dish.
  6. Bake 20 to 25 minutes, until toothpick inserted comes out clean. Allow to cool completely.
  7. On plate, begin stacking cooled cakes by color order (first purple, then blue, green, yellow, orange and red), spreading frosting between each layer. Once all layers are in place, frost over and around entire cake.
