Baked Leftover Turkey Nuggets
[vc_row][vc_column][vc_column_text]When the holiday feast is over and the fridge is stacked with containers, these baked turkey nuggets swoop in like a crispy little rescue mission. They turn leftover turkey into golden, crunchy bites that feel fun and fresh — light enough for a wholesome snack, yet satisfying enough to count as dinner. With Parmesan, panko and just a quick bake, they bring post-holiday comfort without the heaviness.

Baked Leftover Turkey Nuggets
- 2 cooked turkey breasts
- 1/2 cup all-purpose flour
- Kosher salt
- 1 large egg
- 1 cup panko breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- Preheat oven to 350 degrees F with rack in center. Place an oven-safe wire rack over a baking sheet.
- Slice turkey breast into 1-inch-thick strips.
- In shallow bowl, combine flour with pinch of salt. In separate shallow bowl, whisk egg with pinch of salt. In third shallow bowl, combine panko and Parmesan.
- Dip each piece of turkey first in flour, then egg, then panko/Parm, turning to coat fully on all sides. Place breaded turkey on prepared rack.
- Bake the tenders until they’re crisp and golden, 10 to 15 minutes, rotating the pan halfway through.
