Here’s a better-for-you recipe for peanut butter fudge that incorporates a mere ¼ cup of maple syrup as the sweetener. Not only is it super simple and quick to make, it’s also good for you. Protein Peanut Butter Fudge

  • 1 cup smooth organic peanut butter
  • 1-1/2 scoops (60g) vanilla egg white protein powder ( )
  • 1/3 cups coconut oil (melted)
  • ¼ cup maple syrup
  • ¼ tsp. vanilla extract
  • Pinch salt
  1. Line square, high-rimmed baking pan (8x8x2) with parchment paper and set aside.
  2. In mixing bowl, combine all ingredients and mix until well combined. Pour batter into baking pan. (Note: Be sure to melt coconut oil prior to mixing.)
  3. Freeze or refrigerate until firm. Cut into 12 portions.
