Ingredients

Roasted Grapes
2 cups seedless purple or red grapes
3 tsp. olive oil
2 tsp. balsamic vinegar

Salad
10 oz. arugula
2/3 cups walnuts 
3 oz. crumbled goat cheese

Dressing
2 Tbsp. olive oil
1 Tbsp. lemon juice
1/2 tsp. sea salt
1/4 tsp. black pepper

Directions

  1. Preheat oven to 450 degrees F.
  2. In bowl, toss grapes with olive oil and vinegar. Arrange grapes on baking sheet and roast for 10 Remove grapes from oven; let cool for five minutes.
  3. To make dressing, combine olive oil, lemon juice, salt and pepper.
  4. For salad, combine arugula, walnuts, goat cheese and grapes. Drizzle on dressing.
