When roasting grapes, the internal sugars caramelize, the skin softens and the flavor brightens into a much more intense version of itself. Perfect for both savory and sweet dishes, these treats can be mixed with Greek yogurt, sprinkled over baked goods, paired with your favorite protein and so much more. Try this easy summer salad recipe for a quick intro to these deliciously sweet baked berries.
Ingredients
Roasted Grapes
2 cups seedless purple or red grapes
3 tsp. olive oil
2 tsp. balsamic vinegar
Salad
10 oz. arugula
2/3 cups walnuts
3 oz. crumbled goat cheese
Dressing
2 Tbsp. olive oil
1 Tbsp. lemon juice
1/2 tsp. sea salt
1/4 tsp. black pepper
Directions
- Preheat oven to 450 degrees F.
- In bowl, toss grapes with olive oil and vinegar. Arrange grapes on baking sheet and roast for 10 Remove grapes from oven; let cool for five minutes.
- To make dressing, combine olive oil, lemon juice, salt and pepper.
- For salad, combine arugula, walnuts, goat cheese and grapes. Drizzle on dressing.
