White Bean Chicken Chili (Dairy Free!)

Creamy without the dairy (thanks to dreamy coconut milk), hearty without being heavy, and subtly spiced for just the right kick, it’s a one-pot wonder you can whip up in under an hour. Think tender chicken, velvety cannellini beans and a rich broth that’ll have everyone asking for seconds. Grab your favorite toppings and watch this chili steal the spotlight.
White Bean Chicken Chili (Dairy Free)
- 1-1/4 lbs. boneless, skinless chicken thighs
- 1 Tbsp. olive oil
- 13.8 oz. chopped tomato
- 15 oz. white beans
- 1 tsp. pink salt
- 1/4 tsp. black pepper
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/4 tsp. oregano
- 1 cup coconut milk (or coconut cream)
Optional toppings
- Tortilla chips
- Shredded cheese
- Sliced jalapeño
- Red onion
- In soup pot, sauté chicken in olive oil 10 minutes until almost fully cooked.
- Add tomatoes, beans and spices. Bring to boil, cover and simmer 15 minutes.
- Remove chicken from chili, shred or chop, then add back to chili.
- Pour in coconut milk. Simmer additional 10 minutes.
- Serve as is or with toppings of choice.
