Tofu Sausage Crumbles

This recipe transforms humble tofu into a flavor-packed, protein-rich delight, perfect for breakfast scrambles, pasta sauces or as a standalone side. By pressing the tofu to remove excess moisture and then crumbling it, we create a texture that mimics ground meat. The magic happens with a blend of spices — smoked paprika, fennel seeds and a touch of maple syrup — that infuse the tofu with a smoky, savory-sweet profile. Tofu Sausage Crumbles

  • 1 14-oz. block extra-firm tofu (, pressed)
  • 2 Tbsp. avocado oil
  • 1 small yellow onion (finely chopped)
  • 2 medium cloves garlic (minced)
  • 1 Tbsp. tamari
  • 1 Tbsp. maple syrup
  • 2 tsp. smoked paprika
  • 1/2 tsp. dried thyme
  • 1/2 tsp. Himalayan fine pink salt
  • 1/8 tsp. ground black pepper

Optional: 1 tsp. fennel seeds, crushed

Optional: 1/4 tsp. red pepper flakes

  1. Crumble tofu into bowl.
  2. Heat olive oil in large skillet over medium heat. Add chopped onion and cook until softened and translucent, about 5 minutes. Add minced garlic and cook another minute until fragrant.
  3. Stir crumbled tofu into skillet with onions and garlic. Pour in soy sauce and maple syrup. Sprinkle smoked paprika, crushed fennel seeds, dried thyme and red pepper flakes over tofu. Season with salt and black pepper, to taste. Stir until evenly coated.
  4. Cook, stirring occasionally, about 20 minutes, or until tofu is browned and slightly crispy.
  5. Serve hot in breakfast scrambles, burritos, pasta sauces or as a side.
  • Press tofu for at least 30 minutes to remove excess water. The drier the tofu, the better the texture.
