Rustic One-Pan Chicken & Potatoes

This easy-peasy recipe is a lifesaver on busy weeknights. With just one pan and minimal prep time, you'll be savoring the simple joys of home-cooked goodness with less work. Gather your loved ones, set the table and let the oven do the rest.
Rustic One-Pan Chicken & Potatoes
- 6-7 (about 4 lbs.) bone-in, skin-on chicken thighs
- 2 russet potatoes (cut into chunks)
- 1/2 medium onion (chopped)
- 1/4 cup lemon juice
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- Preheat oven to 425 degrees F. In 9x13-inch glass baking pan, combine chicken thighs, potatoes and onions.
- In small prep bowl, whisk together lemon juice, olive oil and spices. Pour over chicken and veggies. Let sit on counter to marinate 30 minutes.
- Bake 50 minutes to 1 hour until chicken is cooked through and skin is crispy.
