Grilled Blackened Honey-Garlic Shrimp

Nothing brings out the taste of shrimp better than grilling them over an open flame. But to ensure this delicate seafood stays tender and juicy, you'll need the right marinade. Ideally, your special sauce will include moisture-saving, flavor-enhancing multitaskers like the ones found in this recipe. There's honey for a sweet gloss. There's a unique seasoning blend for that surge of spice.There's fresh lime juice for its acidity. And then there's rum. Better keep a close eye on that flame, because tonight's dinner is heating up!

Grilled Honey-Garlic Shrimp Skewers

Grilled Blackened Honey-Garlic Shrimp

Ingredients

1 lb. shrimp, peeled and deveined
2 tsp. blackened seafood seasoning, plus more for sprinkling on top
1 lime, juiced
1 large garlic clove, pressed
2 Tbsp. honey, plus more for drizzling
1 Tbsp. olive oil
1 Tbsp. rum (optional)
6 to 8 wood or bamboo skewers
Lime wedges for garnish

Directions

  1. Soak the skewers in water for about an hour to keep from burning. Wash shrimp and drain.
  2. In a small bowl, whisk together honey, lime juice, garlic,seafood seasoning, olive oil and rum.
  3. In a large bowl, add shrimp and pour in marinade, coating well. Place in fridge to chill, about 30 minutes.
  4. While marinating, preheat grill to medium-high heat.
  5. Put shrimp on skewers and drizzle with additional honey.
  6. Grill shrimp about 5 minutes per side, brushing with remaining marinade as they cook.
  7. Sprinkle with reserved seafood seasoning and serve with lime wedges over a bed of rice or mixed greens.
