Enjoy the classic combination of chocolate and cherries in a beautifully layered parfait. Made with nutrient-rich chia seeds, these drinkable meals are nourishing enough for breakfast, but sweet enough to enjoy as a dessert. Ingredients
10 organic fresh cherries, pitted
4 squares of HU Chocolate Bar, grated
Chia seed layer
3 Tbsp. chia seeds
1/2 cup Milkadamia Macadamia Milk (or water)
1/4 tsp. vanilla extract
Whipped coconut cream layer
1 can coconut cream, left in fridge overnight (or 2 frozen bananas)
Chocolate avocado mousse layer
1 large ripe avocado
2 Tbsp. pHresh Products Cacao Powder
2 Tbsp. Milkadamia Milk
2 Tbsp. Vitacost Certified Organic Maple Syrup
1/4 tsp. vanilla extract
Pinch of Redmond Real Salt
Directions
- In two jars, divide ingredients for chia seed layer; let soak.
- Without shaking, open coconut cream. Scoop out top layer, leaving behind any residual liquid. In large bowl, use electric mixer to mix coconut cream until smooth and frothy. (Note: if using frozen banana, beat until smooth like gelato). Spoon cream over chia seed layer in each jar.
- Chop 6 cherries and place on top of the coconut cream layer.
- In blender, process ingredients for mousse layer until completely smooth and creamy. Pour on top of cherries. Garnish with remaining cherries and grated chocolate.
