Gopal's Pumpkin Seed Butter is a tasty, nutty yet delicately sweet, highly nutritious sueprfood snack. We soak and germinate our raw pumpkin seeds which neutralizes phytic acid, an enzyme inhibitor, allowing the body to naturally digest and absorb beneficial nutrients. Vegan Pumpkin “Milkshake” With Coconut Whipped Cream
Ingredients
- 3/4 cup unsweetened vanilla coconut milk
- 1/4 cup pumpkin seed butter
- 2 scoops unsweetened vanilla protein powder
- 1/4 cup pumpkin pureé
- 1/2 to 1 tsp. pumpkin spice
- 1 tsp. sea salt
- 1 tsp. stevia
- 1 cup ice (crushed)
Toppings
- 1/4 cup coconut cream
- Dash pumpkin spice
- In high-speed blender, combine all shake ingredients and blend to desired consistency.
- In bowl, use immersion blender to whip coconut cream until thick; add dollop to milkshake.
- Sprinkle on pumpkin pie spice.
