With just a few simple ingredients, including aquafaba – the liquid from canned chickpeas – you can create a crunchy, sweet snack. The aquafaba acts as a plant-based alternative to egg whites, binding the walnuts together and creating a glossy, caramelized finish. The combination of sweet coconut sugar with a touch of salt balances the flavors perfectly. Use them as a topping for vegan ice cream, yogurt or oatmeal, or enjoy them on their own as a wholesome snack.
Vegan Candied Walnuts
- 3 Tbsp. aquafaba (liquid from canned chickpeas)
- 2 cups 6 oz. walnut halves
- 1/2 cup coconut or brown sugar
- 1 tsp. salt
- Preheat oven to 350 degrees F and line baking sheet with parchment paper.
- In large bowl, whisk aquafaba until foamy. Add walnuts and toss to coat.
- Add coconut or brown sugar and salt. Stir to combine.
- Spread nuts on prepared baking tray in a single layer. Bake 15 minutes, stirring at the halfway mark.
- Let cool to room temperature and store in airtight container for up to a week. Freeze up to 3 months.
