Chewy Molasses Cookies

Chewy Molasses Cookies
- 2 cups organic all-purpose flour (or gluten free flour)
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. ground ginger
- 1 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1/2 cup unsulphured molasses
- 1/2 cup coconut sugar
- 1/2 cup coconut oil
- 1 Tbsp. ground flaxseed (+ 3 Tbsp. water for flax egg)
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In bowl, mix together flaxseed and water and let sit 5 minutes to gel into flax egg.
- In medium mixing bowl, sift together dry ingredients.
- Stir in remaining ingredients until ingredients are incorporated into batter.
- Scoop 1 tablespoon batter per cookie onto baking sheet. Flatten with back of fork to 1/4 inch.
- Bake 11-13 minutes until done.
