Directions
Take one or more scoops daily to supplement your diet with additional protein. Mixes easily with 12 oz water, milk, juice, or yogurt.

Paleo Blueberry Pancakes
Flapjacks, hotcakes, griddle cakes, crepes—whatever you call them, pancakes are a treat for breakfast any day of the week. If they’re homemade, even better. Add blueberries, and your morning is made! Rather than relying on a scoop of processed powder from that red cardboard box in your pantry, try this wholesome combination of almond meal, coconut milk, spices and fresh fruit for a paleo-friendly pancake that’s better by any name.
Paleo Blueberry Pancakes
Ingredients
1 cup almond meal flour
½ cup unsweetened applesauce
½ cup unsweetened coconut milk
½ cup egg white protein powder
2 eggs
¼ to ½ cup blueberries
1 Tbsp. coconut flour
½ tsp. cinnamon
½ tsp. nutmeg
½ tsp. vanilla extract
¼ tsp. baking powder
Coconut oil (for greasing pan)
Directions
- In large bowl, combine all ingredients except blueberries and mix well. Fold in blueberries.
- In small frying pan, heat small amount of coconut oil over medium heat. When hot, pour in ¼ batter per pancake.
- Cook pancakes until bubbling, then flip and continue cooking until done.
