Ancient Grain Salad With Einkorn Wheat Berries

Ancient Grain Salad With Einkorn Wheat Berries
- 16- oz. box Jovial Organic Einkorn Wheat Berries
- 3 Tbsp. Jovial Extra Virgin Olive Oil
- 1 lb. tomatoes (chopped into 1/4-inch pieces)
- 2 medium zucchini (thinly sliced)
- 1 cup loosely packed fresh basil leaves
- 1/4 medium red onion (minced)
- 1 tsp. capers (minced)
- 1 Tbsp. snipped chives
- 1-1/2 tsp. salt
- In large pot, bring 4-3/4 cups water to boil with 3/4 tsp. salt. Add wheat berries and simmer on low for 45 minutes.
- Mix in 2 Tbsp. olive oil and transfer to large serving dish to cool.
- Place chopped tomatoes in a colander with ½ tsp. salt, and let drain 15 minutes. Squeeze tomatoes to release remaining juice and add to wheat berries.
- Add olive oil to medium pan on medium-low heat and sauté zucchini, basil and onion with salt, stirring constantly. Add zucchini to wheat berries.
- Toss in capers and chives and stir until ingredients are distributed.
- Serve at room temperature, chilled or reheated. Store in refrigerator up to 4 days.
