Spiralized Zucchini With Sun-Dried Tomato Sauce
This recipe is so easy, so light, so fresh and so scrumptious it’s sure to land a place on your weekly menu. Sauté fresh garlic and tomatoes along with good-quality sun-dried tomatoes and roasted red peppers, pour the mix over spiralized zucchini noodles and you and your family will be slurping and swirling and smiling for longer than it took to make the meal. You don’t even need to warm up the “zoodles.” Just be sure that the sauce is piping hot when pouring it on.
Spiralized Zucchini With Sun-Dried Tomato Sauce
- 2 Tbsp. olive oil
- 2 garlic cloves (minced)
- 1 cup sun-dried tomatoes (chopped)
- 1/3 cup roasted red peppers (chopped (from jar))
- 2 organic tomatoes (finely chopped)
- 1 cup organic strained tomatoes
- 1-2 tsp. smoked paprika
- 2 bay leaves
- Pinch salt (to taste)
- 1 tsp. black pepper
- 2 zucchinis (spiralized)
- Fresh basil leaves
- In large skillet over medium heat, heat olive oil and add garlic and sun-dried tomatoes. Sauté 5 minutes.
- Stir in tomatoes and peppers and cook 5 minutes. (Note: If smoother texture for sauce is desired, smash tomatoes with fork in this step.)
- Stir in strained tomatoes and mix well. Add paprika, laurel, salt and pepper. Cover and cook for 6-8 minutes.
- Serve on top of the spiralized zucchini and garnish with fresh basil leaves.
