Easy-Peasy Pizza Muffins

the ancient grain einkorn, are perfect for a make-ahead lunch or a munch-worthy afternoon treat. Pair them with a crisp salad for dinner and watch your family "slice" through them with delight.
Einkorn Pizza Muffins
- 1-1/2 cups einkorn flour
- 1 tsp. baking powder
- 1/2 tsp. pink salt
- 1/8 tsp. black pepper
- 1/2 tsp. Italian seasoning
- 1 Tbsp. egg replacer + 2 Tbsp water (combined)
- 1/4 cup olive oil
- 1/2 cup plant-based milk (or dairy milk)
- 1/2 cup shredded mozzarella cheese (vegan or dairy)
- 1/4 cup onion (diced)
- 1/4 cup mini bell pepper (diced)
- 1/2 cup crumbled sausage (cooked and cooled)
Toppings
- Pizza sauce
- Shredded mozzarella cheese (vegan or dairy)
- Preheat oven to 350 degrees F. Line muffin pan with muffin cups.
- Into large mixing bowl, sift together dry ingredients: flour, baking powder, salt and spices.
- Fold in remaining ingredients.
- With medium ice cream scoop, spoon batter into muffin cups.
- Top each muffin with 1 teaspoon pizza sauce and 1 teaspoon shredded mozzarella cheese.
- Bake 25-30 minutes until muffins are cooked through.
