Better-Than-Takeout Veggie Lo Mein (Gluten-Free)
Made in only 15 minutes from start to finish, this veggie lo mein is fast and fresh. Refrain from dialing the local Chinese restaurant and make this clean-eating version of take-out instead. How great is it to know and be in control of every ingredient you put in the skillet and into your body? Because this dish incorporates chickpea noodles, it’s gluten-free and offers an extra kick of plant protein. Stir fry green beans, carrots and baby corn with garlic, liquid aminos, ACV, sunflower butter, honey, sesame oil and ginger for a mouthwatering bowl of good nourishment.
Better-Than-Takeout Veggie Lo Mein (Gluten-Free)
- 1 pkg. Explore Cuisine Organic Chickpea Spaghetti
- 1 Tbsp. sesame oil
- 2 tsp. garlic (minced)
- 1 cup green beans
- 2 carrots (julienned)
- 1 (14 oz.) can baby corn
- 2 stalks green onions (sliced, for serving)
Sauce
- 2 Tbsp. Bragg Liquid Aminos
- 1 Tbsp. apple cider vinegar
- 1-1/2 Tbsp. organic sunflower butter
- 2 tsp. PRI Manuka Honey
- 1-1/2 tsp. sesame oil
- 1 tsp. ginger (diced)
- 1/2 tsp. hot sauce (or more to taste)
- 1/4 tsp. sea salt
- In large pot, cook noodles according to package directions; drain well.
- In small bowl, whisk together all sauce ingredients.
- In large skillet or wok over medium-high heat, heat sesame oil. Add garlic, beans, carrots and baby corn. Cook, stirring frequently, until tender, about 4 minutes.
- Stir in noodles and sauce mixture, gently toss to combine and cook a few minutes.
- Serve immediately, garnished with green onions.
