Corned Beef Reuben Pizza

[vc_row][vc_column][vc_column_text]St. Patrick’s Day is in the rearview, but you still have corned beef in the fridge. Here’s a fun recipe that dances a jig with that leftover corned beef by incorporating it into a Reuben pizza. This playful twist combines the classic flavors of a Reuben sandwich - corned beef, cabbage and Swiss cheese - atop a crispy pizza crust. A drizzle of olive oil and honey, along with a pinch of crushed red pepper and sea salt flakes, will have your taste buds singing an Irish shanty.

Leftover Corned Beef: Reuben Pizza

Corned Beef Reuben Pizza

  • 2 lbs. corned beef (leftover or cooked per instructions below)
  • 12 oz. Guinness beer
  • 1/2 cup beef broth
  • 1/2 head green cabbage (sliced)
  • 12 oz. pizza crust (prepared)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Irish Swiss cheese
  • Drizzle honey
  • Splash olive oil
  • Sprinkle red chili pepper flakes
  • Pinch sea salt flakes
  1. Preheat oven to 350 degrees F. (Note: If using leftovers, skip to step 5.)
  2. In casserole dish, place corned beef and add beer. Cover tightly with foil and bake 2 hours.
  3. Remove corned beef from oven and add beef broth and cabbage. Make sure to submerge cabbage in liquid. Cover with foil and bake 30 minutes.
  4. Remove corned beef and set aside to cool. Return cabbage to oven to cook another 30 minutes. Slice corned beef thinly across grain.
  5. To prepare pizza, set oven to 425-500 degrees F, depending instructions on package of prepared pizza crust being used
  6. On cookie sheet, lay out pizza crust and top with mozzarella and Swiss cheese, sliced corned beef, sliced cabbage and drizzle of olive oil. Bake 8-10 minutes or until golden brown and crispy.
  7. Finish with a drizzle of honey and olive oil, and a pinch of chili flakes and salt flakes.
