Almond Flour Peanut Butter Cookies

Something about peanut butter cookies tugs a little extra on those childhood-memory heartstrings. We remember sneaking fingerfuls of peanut butter while mixing the dough, carefully pressing each cookie with the tines of a fork, and swooning from the all-encompassing aroma while waiting to taste our creation warm out of the oven. By incorporating almond flour, these classic cookies get a healthy upgrade to gluten-free. And almonds boast extra nutritional benefits. Consider them grown up just enough. Bake these up in 10 minutes and feel transported to simpler times. Gluten Free Peanut Butter Cookies on Wire Rack | Vitacost.com/blog
