Pumpkin Pie Overnight Oats With Coconut Crumble
- 2 cup rolled oats
- 13 oz. coconut milk (or oat milk)
- 1 cup pumpkin puree
- 2 Tbsp. chia & flax seed blend
- 3 Tbsp. maple syrup
- 1 tsp. vanilla extract
- 1/2 tsp. pumpkin pie spice
- 1 tsp. cinnamon
- Pinch salt
Crumble topping
- 1/4 cup pumpkin seeds (chopped)
- 4 pitted dates (finely chopped)
- 1/4 cup unsweetened coconut flakes (chopped)
- 1-1/4 cups coconut yogurt (or yogurt of choice)
- In mixing bowl, combine oats, coconut milk, pumpkin puree, chia and flax seeds, maple syrup, vanilla extract, pumpkin pie spice, cinnamon and salt; mix thoroughly.
- In separate bowl, combine chopped pumpkin seeds, dates and coconut flakes; mix together to form crumble topping.
- Into 6 glasses or recycled glass jars, divide oat mixture. Top each with crumble topping, cover and refrigerate.
- When serving, add dollop of yogurt and sprinkle of cinnamon.
