Pumpkin Pie Overnight Oats With Coconut Crumble

  • 2 cup rolled oats
  • 13 oz. coconut milk (or oat milk)
  • 1 cup pumpkin puree
  • 2 Tbsp. chia & flax seed blend
  • 3 Tbsp. maple syrup
  • 1 tsp. vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • Pinch salt

Crumble topping

  • 1/4 cup pumpkin seeds (chopped)
  • 4 pitted dates (finely chopped)
  • 1/4 cup unsweetened coconut flakes (chopped)
  • 1-1/4 cups coconut yogurt (or yogurt of choice)
  1. In mixing bowl, combine oats, coconut milk, pumpkin puree, chia and flax seeds, maple syrup, vanilla extract, pumpkin pie spice, cinnamon and salt; mix thoroughly.
  2. In separate bowl, combine chopped pumpkin seeds, dates and coconut flakes; mix together to form crumble topping.
  3. Into 6 glasses or recycled glass jars, divide oat mixture. Top each with crumble topping, cover and refrigerate.
  4. When serving, add dollop of yogurt and sprinkle of cinnamon.
