Hazelnut Roasted Cauliflower With Orange & Saffron

File this one under phrases you never thought you’d hear: roasted veggies are all the rage right now! So why is everyone swapping their steamer basket for a baking dish? This cooking technique typically adds a touch of sweetness and a comfortingly crunchy texture, especially when it comes to cruciferous veggies. The recipe below is no different, with a sprinkling of saffron, orange juice and hazelnuts to really bring out the gourmet-worthy, caramelized glory of whole, roasted cauliflower.

Hazelnut Roasted Cauliflower With Orange & Saffron

Ingredients Serves 2-4 1 large head cauliflower, whole, remove leaves 1 orange, juice and zest 1 Tbsp. roasted hazelnut oil Pinch saffron 1/4 cup water 1/4 cup coconut milk 1 tsp. sea salt Ground pepper, to taste 1/3 cup hazelnuts, roughly chopped 1/2 cup packed flat leaf parsley, roughly chopped Directions
  1. Preheat oven to 375 degrees F.
  2. In a large Dutch oven or oven-proof dish, place cauliflower.
  3. In a small bowl, mix together orange juice, zest, hazelnut oil and saffron. Pour evenly over cauliflower. Sprinkle with salt and pepper.
  4. Bake uncovered for 45 minutes.* Remove from oven, pour coconut milk and water over top, bake 10-15 more minutes.
  5. Sprinkle with parsley and hazelnuts, slice and serve.
*Note: If you want a crisper cauliflower, do the first round of baking for 25 to 30 minutes instead of the full 45, before adding the coconut milk. Be aware that the cooking time will vary depending on the size of your cauliflower head. Take a peek at its progress 25 minutes in, and go from there.
