Perfect Pineapple Salsa
A mouthwatering mélange of sweet and hot, this fresh salsa marries pineapple with red onion, peppers and cilantro for refreshing, bright flavor. It’s simple and quick to throw together as an appetizer to scoop up with tortilla chips, but can be part of a bigger presentation when served as a sassy summer side to top grilled fish or chicken tacos.
Perfect Pineapple Salsa
- 3 cups pineapple (canned of fresh, diced)
- ¼ red onion (diced)
- ½ cup red bell pepper (seeds removed, diced)
- ½ jalapeno pepper (seeds removed, diced)
- ¼ cup cilantro (chopped)
- 3 Tbsp. lime juice
- 1 Tbsp. red wine vinegar
- 1 Tbsp. pineapple juice (from can or fresh)
- ¼ tsp. pink salt
- ? tsp. black pepper
- Tortilla Chips for serving
- In medium bowl, combine pineapple, onion, peppers and cilantro.
- In separate bowl, whisk together lime juice, vinegar, pineapple juice, salt and pepper.
- Pour dressing over salsa and mix well.
- Refrigerate up to 3 days.
