Directions
Preparation:
Place 2 cups of water in a pot and bring to a boil. Add Ramen and simmer gently for 4 minutes, stirring occasionally. When the noodles are jut soft, remove from heat and mix in contents of the enclosed soup packet.

Chicken Chow Mein
Ordering Chinese takeout is easy. But you’re always left feeling bloated from loads of sodium and all those mystery ingredients. Before you pick up the phone tonight, try making this clean-eating chicken chow mein at home. Not only is it fresher, but you’ll be clicking together chopsticks before the driver would have even left the restaurant.
Ingredients
6 oz. chow mein noodles
2 small chicken breasts, cooked and cut into cubes
1 red bell pepper, sliced thinly
1/2 cup carrots, sliced thinly
1 green onion, chopped
1/2 cup mushrooms, sliced
1/2 cup snap peas
1/2 cup white onion, chopped
2 garlic cloves, minced
1/4 cup soy sauce or coconut aminos
1 Tbsp. hoisin sauce
1/4 tsp. red pepper flakes
1 Tbsp. cooking oil
Salt and pepper for taste
Pinch of sesame seeds
Directions
- Cook noodles according to package directions.
- Heat wok (or large skillet) to medium high. Add oil, onion and garlic and sauté for 1 minute. Add carrots, bell pepper, mushrooms, snap peas, red pepper flakes and a pinch of salt and pepper. Cook down for about 5 minutes.
- Add chicken, chow mein noodles, green onion, soy sauce and hoisin to vegetables in wok. Lower heat and mix well. Cook for 2 minutes. Garnish with toasted sesame seeds.
