California Brown Basmati Rice

Soft  & Scented

This aromatic rice is packed with whole grain goodness. It cooks with the fragrance of Indian Basmati, but without elongation. An exotic choice when a fluffy, drier texture id desires.

 


Directions

Servings (about ¾ cup cooked rice) 2-3 4-6 8-10
Rice (dry) ½ cup 1 cup 2 cups
Water or Broth 1 cup 1½ cup 3 cups
Butter or Oil 1½ tsp. 1 Tbsp. 2 Tbsp.

1. Combine rice, water, and butter (optional) in a pot, and bring to a boil.

2. Cover with a tight-fitting lid, reduce heat to low simmer, and cook 40 minutes.

3. Remove from heat (with lid on!) and let steam for 10 minutes. Fluff with fork.

 

To prepare in a rice cooker, use same water-rice ration. *If rice is crunchy at the end of cooking time, it may be necessary to add 1-2 Tbsp. liquid and cook longer.

Cilantro Lime Rice (with Brown Rice)

Plain white rice is not going to get the gang sprinting to the dinner table. If you expect to elicit any enthusiasm from your crew, your meal needs a base or side dish that deserves it – like cilantro lime rice. With better-for-you brown rice, zesty citrus and flavorful cilantro, this recipe will grab the group’s attention—and their appetites.

Makes 3 cups

Ingredients

1 cup brown rice, rinsed thoroughly and strained
1-3/4 cup water
1 Tbsp. olive oil
1 small bay leaf
1/4 tsp. salt
2 Tbsp. lemon juice
2 Tbsp. lime juice
1/4 cup cilantro, finely chopped

Directions

  1. In medium pot, combine rice, water, olive oil and bay leaf. Bring to boil, reduce to simmer and cook covered for 40 minutes
  2. In large bowl, combine rice with salt, lemon, lime and cilantro.

Note: Want more veggies? Make this dish even more nutritious using cauliflower rice in place of brown.
