What In The World Is Regenerative Rice?

 

If you ask us, it starts with organic. And while everyone else is busy jumping on the bandwagon, we gotta say-we've always been riding up front! Directions

Microwave

 

Squeeze to separate the rice inside

Tear the top corner open to vent

Heat on high for 2 minutes then open and let steam for 2 minute

 

Use caution when removing pouch from microwave as the steam from the pouch will be hot!

 

Stovetop

Squeeze to separate the rice inside

Tear open and pout in skillet

Stir in 1 tsp of olive oil and heat over medium until warmed thoroughly

 

For best results, heat before eating. Refrigerate for up to 2 days after opening.

Stuffed Tomatoes

Filled with fluffy rice, bits of rich prune, fresh herbs and a perfect blend of spices, this dish is a bright twist on a classic favorite. Simple to prepare and bursting with Mediterranean flavors, these stuffed tomatoes are sure to become a new favorite in your recipe collection.

Stuffed Tomatoes Filled With Rice and Herbs on Scallop-Edged White Plate Set on Rustic Wooden Board

Stuffed Tomatoes

  • 4 tomatoes
  • 2 cups cooked rice
  • 4 prunes (chopped)
  • 1/3 cup parsley (chopped)
  • 1/4 tsp. cumin
  • 1/4 tsp. oregano
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 Tbsp. olive oil
  1. Cook rice according to package instructions.
  2. Preheat oven to 375.
  3. With knife, slice tops off tomatoes, use spoon to scoop out flesh and set that aside. Leave outer part of tomatoes intact and arrange them in baking dish. If using tomato tops for presentation, set them in baking dish, as well.
  4. For stuffed tomato filling, chop up scooped out tomato flesh. In bowl, stir together chopped tomato, cooked rice, chopped prunes, parsley and spices.
  5. Fill each tomato with about ½-cup filling. Drizzle tomatoes with olive oil. Bake for 20 minutes.
