Directions

Cooking Instructions

  1. In a medium saucepan (3qt.) bring 2 1/4 cups of water to a boil over high heat.
  2. Stir in 8oz of wild rice and cover. Reduce heat to a fast simmer (medium-low heat).
  3. Cook for 45-50 minuets (Do not lift lid while cooking!).
  4. Remove from heat. Let stand covered for 10 minutes. Fluff with fork, salt to taste and serve.

*If the rice is too firm at the end of cooking, it may be necessary to add 1-2 Tbsp. of liquid and cook longer

**Wild rice can be prepared in a rice cooker following the same rice to water ratio.

Autumn Harvest Bowls

Roasted Sweet Potatoes

  • 4 cups sweet potatoes (cubed (2 large))
  • 4 Tbsp. olive oil
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder

Dressing

  • 1 cup yogurt
  • 2 Tbsp. maple syrup
  • 1 Tbsp. mustard
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. lemon juice
  • ½ tsp. salt

Remaining Bowl Ingredients

  • 8 cups kale leaves (torn into small pieces)
  • 2 cups wild rice (cooked)
  • ½ cup pecans
  • ½ cup walnuts
  • 1 cup mozzarella pearls
  • 2 cups cooked chicken (shredded)
  • 2 cups cubed apples
  • 2 cups cubed pears

Roasted Sweet Potatoes

  1. Preheat oven to 420 degrees F.
  2. On sheet pan, toss potatoes with olive oil, salt, black pepper, onion and garlic powder.
  3. Roast for 30 to 40 minutes, until tender and caramelized. Set aside.

Maple Yogurt Dressing

  1. In food processor or blender, blend yogurt, maple syrup, mustard, apple cider vinegar, lemon juice and salt until well incorporated.
  2. Pour dressing into serving dish or jar.
  3. Refrigerate leftovers in sealed container for up to two days.

Assembly

  1. In individual salad bowls, layer kale, sweet potato, wild rice, apples, pears, mozzarella, chicken, pecans and walnuts. Drizzle with dressing.

Notes:

  1. Harvest Bowls can be served warm or cold.
  2. Most ingredients can be prepared ahead of time and assembled before serving
  3. Leave out chicken and cheese to make vegan.
