Grilled Brussels Sprout Skewers with Maple-Mustard Sauce
As the weather welcomes you outside, your backyard gains a new role as a kitchen. Embrace the opportunity to break from roasting or baking your favorite vegetables and enjoy the flavors and textures that grilling provides. Thread crunchy Brussels sprouts on skewers and brush them generously with a sweet and tangy sauce made of maple, mustard and garlic. Grill until tender on the inside with a flavorful golden crisp on the outside. Is there really anything better than the warmth of food, family and friends on a starry summer night?
Grilled Brussels Sprout Skewers with Maple-Mustard Sauce
- 1 lb. medium Brussels sprouts
- 3 Tbsp. maple syrup
- 3 Tbsp. whole grain garlic mustard
- 2 Tbsp. extra virgin olive oil
- 1-1/2 tsp. red pepper flakes
- 2 garlic cloves (finely minced)
- Salt (to taste)
- Pepper (to taste)
- Bamboo skewers
- Preheat gas grill (or grill pan on stove) to medium-high heat. Soak 8-10 bamboo skewers in water about 15 minutes.
- In medium mixing bowl, stir together maple syrup, mustard, olive oil, red pepper flakes and garlic. Season with salt and pepper to taste. Set aside.
- Trim stems from Brussels sprouts and remove outer leaves. Cut each sprout in half.
- Carefully thread 5-6 halved sprouts onto skewer through stem area.
- Brush both sides with maple-mustard sauce. Grill 5-7 minutes on each side or until desired tenderness is reached.
- Brush sprouts with remaining sauce before serving.
