Red Lentil Curry
- 3 Tbsp. olive oil
- 1 medium yellow onion (diced)
- 1 red bell pepper (seeds removed and diced)
- 1 carrot (diced)
- 5 garlic cloves (finely chopped)
- 2 Tbsp. ginger
- 2 Tbsp. yellow curry
- 1/4 tsp. crushed red pepper flakes
- 1 cup lentils
- 3-1/2 cups vegetable broth
- 1 can (14 oz. fire roasted tomatoes, diced)
- 1 can (12 oz. coconut milk)
- 1/4 cup chopped cilantro (optional)
- Kosher salt and pepper (to taste)
Garnish
- Cilantro
- Coconut milk
- Lime wedges
- In large pot over medium-high heat, add oil, onion, carrot and red bell pepper and cook until fragrant and tender.
- Stir in garlic, ginger, curry powder and crushed red pepper flakes. Cook for 1 minute.
- Add lentils and stir, broth, tomatoes and coconut milk and stir until combined.
- Season with salt and pepper.
- Bring curry to boil and then reduce heat to low.
- Simmer for 20 minutes, stirring occasionally.
- Ladle soup into bowls and garnish with cilantro, drizzle of coconut milk and lime juice.
