Vegan Reuben Sandwich
These fully-loaded vegan Reuban sandwiches are filled with
plant-based “meat,” tangy Russian dressing and a quick homemade slaw to replicate the classic flavors of this beloved lunchtime favorite, which traditionally contains corned beef – making this a fun dish to enjoy on
St. Patrick’s Day! This recipe makes four delicious servings.
Vegan Reuben Sandwich
Sauerkraut Slaw
- 2 tsp. olive oil
- ½ cup diced white onion
- 1 garlic clove (minced)
- ½ green cabbage (shredded (about 10 ounces))
- ¾ cup apple cider vinegar
- ½ cup apple cider
- 2 tsp. kosher salt
- ½ tsp. caraway seeds
- ½ tsp. whole black peppercorns
Vegan Russian Dressing
- ½ cup vegan mayonnaise
- 3 Tbsp. ketchup
- 1 Tbsp. Dijon mustard
- 1 Tbsp. finely minced onion
- ½ tsp. smoked paprika
- ½ tsp. kosher salt (to taste)
- Ground black pepper (to taste)
Sandwiches
- 8 slices rye bread
- Vegan butter
- 8 slices vegan corned beef (such as Unreal Deli)
- 4 slices vegan swiss cheese
Sauerkraut slaw
- In large skillet over medium-high heat, heat olive oil. Add onion and garlic and cook until soft, about 5-7 minutes. Add cabbage, vinegar, cider, salt, caraway and peppercorns. Bring to boil, then cover and reduce heat to low. Cook for 30 minutes, until cabbage is wilted. Add water if necessary to prevent drying. Remove from skillet and cool while you prepare the sandwiches.
Vegan Russian Dressing
- In small bowl, whisk together all dressing ingredients. Taste and adjust seasoning to taste.
Sandwiches
- Spread butter onto one side of each slice of bread. Flip four slices over and spread with Russian dressing, then top with sauerkraut, vegan corned beef and a slice of cheese. Top with the second piece of bread, butter side up.
- Heat skillet over medium heat. Add sandwiches and cook until bread is golden and crisp and the cheese is melted, about 3-4 minutes per side. Remove from skillet and serve with more dressing on the side for dipping.
