Creamy Avocado Key Lime Pie

And this creamy, light-green dream is a proven hit with kids and grown-ups alike.
Creamy Avocado Key Lime Pie
Crust
- 12 lady finger cookies
- 4 medjool dates (pitted, softened in hot water 5 minutes, drained)
- 1 cup coconut flakes (toasted)
- 2 Tbsp. water
Filling
- 2 medium avocados
- 7.4 oz. sweetened condensed coconut milk
- 2 tsp. lime zest
- 1/3 cup lime juice
- Pinch salt
- In food processor, combine lady finger cookies, soaked dates and toasted coconut flakes. Pulse until cookies are broken into crumbs. Add water, pulse again until mixture is slightly moist and crumbly.
- To 9-inch pie pan, add crust mixture and press evenly into bottom and sides. Place in fridge to chill.
- In clean food processor, combine all filling ingredients and pulse until smooth.
- Pour filling into pie crust and refrigerate pie at least 2 hours before serving.
- Serve with whipped cream, if desired. Consume within 2 days.
