Chocolatey Brownies with Mint & Pistachio (Gluten-Free)
Sink your teeth into a swoon-worthy combination of flavors. These cacao-rich brownies offer chocolate, mint and pistachio in every luscious bite. And because they’re gluten-free, they’ll please a wider, wide-eyed audience. Feel free to play with the leading flavor by adding a splash more mint extract for a bigger blast of cool or an extra handful of pistachios for more salty crunch.
Chocolatey Brownies with Mint & Pistachio (Gluten-Free)
- 1/2 cup (1 stick) grass-fed butter (room temperature)
- 1-1/2 cups coconut sugar
- 2 eggs (room temperature)
- 1/2 cup chocolate chips (melted)
- 2 tsp. mint extract
- 1 tsp. vanilla extract
- 1/4 cup cacao powder
- 3/4 cup gluten-free oat flour
- 3/4 cup almond flour
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/2 cup pistachios (chopped)
- Preheat oven to 350 degrees F. Line 8x8” baking dish with parchment paper.
- In large mixing bowl, with mixer on high speed, beat together butter and coconut sugar for 2-3 minutes.
- With mixer on low speed, add one egg at a time until mixed well.
- Slowly mix in melted chocolate chips until well combined.
- Mix in mint and vanilla extract.
- With spatula, stir in cacao powder, oat flour, almond flour, salt and baking powder until just combined.
- Spoon mixture into prepared pan and sprinkle with chopped pistachios.
- Bake 25-35 minutes or until toothpick inserted in center comes out mostly clean.
- Let cool before serving.
