Greek Yogurt Pumpkin Pudding
- 1 cup plain Greek yogurt
- 1/2 cup organic pumpkin
- 2 Tbsp. maple syrup
- 1/ 2 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1/8 tsp. ground cloves
- Pinch salt
- Sprinkle granola
- In mixing bowl, combine all ingredients and mix well.
- Prior to serving, top with granola.
- Chef’s tips: Make a large batch and portion into individual servings for the week. Add granola just prior to eating. Serve with apple slices for dipping.
